If you go all in pre flop you have about 80% to win (85 against a random card 78-80 against a decent all in hand).

"Count cards"... obviously you are talking about Blackjack. Right?

I think the chance you have to win will depend on the number of players calling, and also the cards they have. But I'm sure its higher than 50%. For AA against a random hand, I think its like 4:1 in favor of the AA.

By card counting do you mean in Blackjack? or do you mean Poker Odds calculations?

Card counting has to do with Blackjack and has no value in poker.

As for AA in Hold'em, it depends on how many opponents you are up against.

If you are up against and you have you are slightly better than a 3-1 favorite in a five card race. If you are against a pocket pair you are 4.5-1.

If you have and are against and

60.54%

16.55%

22.62%

The tie is .29% on all three hands

If you go all in against 9 other random hands with AA your Equity will be around 31% of the time with each random hand having approximately 7.5% equity. It'd be high variance, but definitely a dream come true.
